Creative ways to handle Treasure

D&D is a game about fighting bad guys and getting treasure at its roots. But, as we focus more and more on interesting story beats, roleplaying and so forth, it gets harder to find ways to legitimize having someone find 500 gold pieces next to the giant centipede they just killed.

This would go over ways to make treasure interesting, and how to scatter it through your game instead of just turning monsters into Loot Pinatas. Or maybe even creating in universe reasons for why they would be treated like actual loot pinatas.

When I am DMing I tend to be very stingy with treasure. In the economics of my worlds everything is cheap but there isn't a lot of treasure either. Realistically, that centipede would value shiny things or tasty things. What use would it have for 500 gp? It might like the luster of gold pieces but wouldn't probably hang around the same spot long enough to collect 500 of them.

This habit of making the dungeons spare is probably a result of when I first started DMing way back when and every creature killed had lots of treasure and lots of magic items. Nowadays this does 2 things: it makes the players appreciate the treasure they DO find and it fits in with the economy of the world. And they know that they can't squander what they have recklessly because they won't have enough money to buy that scroll or healing potion or magic weapon that they have so longed for.
